#135: Turkmenistan – Ichlekli

When I first saw this recipe, I thought this seemed a lot like a calzone and Katie of the 1990s LOVED calzones. There was a great place where I grew up called “Granny’s Pizza” that had pizza kits and calzones available for fundraising efforts for the area schools. The calzones were extremely bread heavy (Have you ever had a Pepperoni Roll? Then you understand.) but they were so so good. So when I found this recipe for this stuffed flatbread from Turkmenistan it took me right back. But as opposed to cheese and pepperoni, the Turkmen’s version of a Shepherd’s Pie is made with a very basic dough that only takes a few minutes to prepare and be ready for use and is stuffed with finely chopped steak, onion, tomato and red pepper. With just a hint of red pepper, this was amazingly flavorful and was a nice departure from some of our healthier or more complicated dishes as of late. This was a total comfort meal and my guess something that even the pickiest of eaters would enjoy.

Additional Notes: Look, this was a great change in pace for my cooking and we enjoyed the dish. But if given the choice of eating all the dough in a meal, regular pizza will always win for me. Hands down.
