#140: Sudan – Ful Medames

When I was starting to do some research into the African countries I had left to cook dishes from, I tried to explore side dishes as an option since I’ve gotten into a little bit of a weeknight cooking rut of a potato/vegetable medley alongside a protein. Ful Medames, Sudanese Fava Beans, double as both a side dish or a main dish for the bean-loving vegetarians out there. The instructions were a bit sparse so I improvised a bit, electing to cook the vegetables a bit more than described in the recipe. I was pleasantly surprised with the result, which with smaller cut vegetables, could have been a great dip!
