
Another day, another side dish that looks very familiar! So as I was pulling together the post for this dish, I noticed that it looked so similar to the last dish I made I worried I had made a mistake. Did I make the same thing twice? Am I going a little crazy and can’t remember what I cook from day to day? It’s completely possible. Life has been pretty hectic lately so I haven’t been able to devote as much time to my usual recipe research. As I mentioned previously, I’ve been trying to find some simple side dishes that I can easily whip up for a weeknight meal without a lot of need for an arsenal of ingredients. This dish fit that bill.
Kachumbari is an African Tomato and Onion Salad that is popular in a number of African countries, including Uganda. It’s comprised of onion, tomato, lemon juice, and avocado with a bit of heat courtesy of red pepper. To me, it reminded me of a tomato dominant chunky guacamole. Was it the most exciting dish? No. But it fit the bill for what I was looking for last week and took me about 10 minutes to put together. That can’t be beat on a busy weeknight.

Additional Notes: No notes! But seriously, this was incredibly easy and made me realize that some dishes that are commonplace for some regions of the world don’t need to be overly complicated and for this project, I’m trying to stay true to the regions of the world from which I cook.
