
Have I been in a bit of a cooking rut? Yes. Have I also been incredibly busy? Yes. Does this call for pie? Yes! Yes! Yes!
It’s been a while since I’ve found a dessert to make for this project but looking ahead, I have a feeling I’ll be incorporating a bit more of these into my project over the coming weeks. Plus who doesn’t like the person who brings in treats to the office?
I’ve never quite had a pie like this and I was surprised by how much I liked it. The recipe is pretty straightforward. You lightly cover the base with shredded coconut and then cover it with a mix of chopped macadamia nuts (I liked the look of them halved), brown sugar, egg, honey, coconut milk, and a little bit of melted butter. The final consistency was that of a nutty custard. Top it with a little whipped cream and the end result was divine.

Would Make it Again? Yes
Additional Notes: I’m not going to lie, I was not going to try to make this pie crust. I’ve struggle with pie crust in the past and I didn’t have the patience nor time to attempt it for this pie. I opted to buy a pre-made shortbread crust for this and I think it worked well.
