#146: Malawi – Sweet Potato Cookies

As we head into the Thanksgiving holiday, I found it only fitting to highlight a recipe that might give you a way to repurpose some of your leftovers, if you are the type to make a simple mashed sweet potato…or if you just have a bunch of extras sitting around.

A few weeks ago I made this simple Sweet Potato Cookie representing Malawi. Only a handful of ingredients are needed to make them and if you just so happen to already have mashed some sweet potatoes with butter, you’re halfway there! I chose to make these as more of a drop cookie (though I’m sure I have a heart cookie-cutter somewhere) and they turned out great. The taste is a little reminiscent of a pumpkin cookie but less sweet and I loved the addition of raisins.

Additional Notes: No notes, really! These are definitely a healthier type of cookie and I enjoyed it as a mid-morning snack with English Breakfast Tea.
