
We had a dash of snow over the course of the week earlier this month, which begged for a hearty stew to accompany it. Given that I’m in the final weeks of pregnancy, I wasn’t getting outside much given the elements, but the cold seemed to seep into my bones despite staying inside where it was cozy.
It’s important to note that while this recipe is very easy to make and the steps are simple, one thing it does require is time. And since I’d been a bit more cooped up, it was easy to set aside a few hours to have this cooking slow on the stovetop. So do the easy prep, then curl up with a book or your favorite show, just occasionally checking on its status. I was amazed at how tender the meat came out and I think any beef stew lover will be pleased with this recipe.

Would Make it Again? No (only because I’m not a big beef stew person, but this was great!
Additional Notes: No real notes! In hindsight this would have also been great with a nice crusty bread.
