#16: South Sudan – Sakuma Waki

Kale Yeah? More like Kale No!

At this point in this project, when faced with the sheer volume of countries in Africa, I decided that I should make a point to try and cook from two African countries each month. One thing I noticed was that many of the dishes were very similar OR they were very heavy in the meat department. I don’t eat a lot of red meat (maybe once every other month or so) so I was trying to find some healthy side dishes as an option. I had some kale and tomatoes in my CSA delivery for the week and thought this would be a good use for it. I’ll admit, I’m pretty picky when it comes to kale. I usually enjoy it most if it’s Lacinato or very tender greens used in a salad. So I can’t say I’m completely surprised that I didn’t really enjoy this dish AT ALL.
