#92: Sao Tome & Principe – Fish Feijoada

If you’re going to do a summer stew, this may be a good pick. This easy Fish Feijoada, representing Sao Tome & Principe, was dubbed perfect for a weeknight meal in the recipe I used, and I would have to agree. This African island nation rests near the equator and is part of a volcanic chain.

I’ve been trying to incorporate more fish into my weeknights (non-salmon because we eat that pretty frequently). I figured fish would be a safe bet for an island nation and with a hectic work week last week, I wanted something that was light, yet filling, and so simple I could do this half asleep. This dish checked all the boxes. With the addition of vegetables and white beans, this was also relatively guilt-free.

Would Make it Again? Yes.

Additional Notes: I cut this recipe in half for two people, which was very easy to do. I think this could work with a number of flaky white fish, but I’m a bit partial to cod.
