
One of the best surprises I’ve come to experience through this country cooking challenge is how much I’ve enjoyed some of the dishes from Africa, especially the stews. I already knew I loved peanut butter but its use in so many African dishes has been a delight. From a flavor add to a thickening agent to sprinkled peanuts on top as a garnish, I AM HERE FOR IT. While I’ve made some stews before that included carrots and potatoes, this was the first time I’d seen squash featured so prominently, not to mention the inclusion of coconut milk and chickpeas. So if you want something to warm your soul this winter, and want a break from meatier dishes, I highly recommend this. Quinoa was also cooked and served on top but if you don’t want that added heft, it’s great without. Or with rice! Really, the base was just fantastic for this so you can take your own spin on it.
