#23: Jamaica – Jerk Chicken

Char is good, right?

Grilled chicken is one of my favorite things, and I have no doubt that it will feature prominently in this blog whenever the opportunity to try a new spice blend or sauce comes up. I’ve used jerk seasoning before on chicken breast, but this is my first time owning my own grill so I thought I’d take it up a notch.

We are still learning how to best use our grill, and grilling bone-in chicken takes a little more finesse than our usual “throw some seasoned breasts on the grill” weekday tactic. I think the reason we got a BIT too much char was the temperature was too high. But the chicken wasn’t overcooked and I’ll take a little extra char over dry chicken any day.

Additional Notes: While picking up a pre-mixed jerk seasoning at the grocery store would be the easier route, making your own marinade isn’t too cumbersome and I think worth the extra effort. This recipe called for scotch bonnet peppers but I used habaneros and was very happy with the results.
