#25: Nauru – Coconut Crusted Fish

I have a master excel spreadsheet with all of the countries listed alphabetically. I want to make sure that I’m not always picking a country that I’m familiar with or can even find on a map. So while scrolling through my list I found Nauru and started to read up a bit more on the region. While I assumed it was an island nation, I was not aware that it was part of Micronesia, which sits to the east of Asia and north of Australia. This island boasts some of the highest obesity rates in the world and since I found myself with some leftover shredded coconut (from my alfajores a week or so earlier) I thought I’d knock out this simple recipe. Additional Notes: This was really easy and if you have kids who like fish sticks, I think you could try to modify this to make for children. For me, I just didn’t find the end result particularly special, so this will not be going into the cooking rotation.
