#90: St. Lucia – Caribbean Banana Bread

Do not underestimate the humble loaf bread. And sadly, photos don’t typically do them justice. Even though they are pretty simple to make, the flavors can really knock you out and the texture? So moist. This was what I needed last week and this recipe DELIVERED.

Last week we had a lot going on at work and it was one of those rare occasions where several of us were in the office. In the “before times” I regularly brought baked goods into the office. Because who doesn’t love baked goods? And they are best shared with others and not the thing you eat everyday for a week at your kitchen counter, because you “went through all the effort and hate to waste food”…but I digress.

I never thought I was a banana bread person, but this recipe representing St. Lucia might have converted me. I loved the blend of spices (I went a bit heavy on cinnamon by accident but it paid off). This was gobbled up by my coworkers over the course of a busy work day and I will definitely make this again.

Additional Notes: No notes! But using more cinnamon is always a good idea. 🙂
