
It’s hard to believe I’ve made it to 100 countries, just over the halfway mark for this project. It’s taken 21 months so if you’re a math person, that means I’ve been averaging 4-5 new countries each month. I initially thought I could really push myself and get this all done in 3 years but as this year has ticked by, I realized that I didn’t want to rush myself, so I think 4 years is far more feasible. Plus I want to revisit a few countries that I felt deserve a second chance, whether its retrying the dish that was a disaster the first time, or trying something different. So you’ll see a few posts like that as 2022 comes to a close.
But for #100 I went with some comfort food in the form of a triple cheese pasta/dumpling type of dish packed with caramelized onions from the tiny of country of Liechtenstein: Käsknöpfle. I was a little skeptical at the method used in the many recipes I looked into for this as the dough seems to be treated like a spaetzle and you’d use a grater of sorts to make the little spirals of pasta. I did not find that this worked for me so I improvised and made little blobs with a teaspoon. It wasn’t the prettiest method but the end result resembled a dumpling and I can’t argue with how wonderful those are. I served with applesauce, as is custom.

Additional Notes: Don’t get me wrong, this dish was good. But I think there are other cheese pasta dishes, or even more complex dumpling dishes, that I would put ahead of this in the queue. But given the slow transition to Fall comfort foods, this dish was the perfect bridge for this time of year. Also this dish reminded me what a dream caramelized onions in butter can be. 🙂
